“When they started farming, my parents had fifty cows. Now I’m about to take over the farm, we have 275. That’s a lot, but I still know them all by name. This year, six of our cows produced more than 100,000 litres of milk. I prefer to have nothing to do with all the gadgets and whatnot. I like to do everything myself, working with the animals or the machines or on the soil. We give our cows the best cuts of the grass. It’s good for the milk and that means it’s good for De Graafstroom’s naturally matured cheese.”
