“Our farm thrives on `t Hoog, near Vleuten, where I was born. The land is a little bit higher up here, on the banks of sediment left by the Leidsche Rijn River, on the edge of the Groene Hart region and it’s a great source of nutrition for our 140 cows, who give delicious milk every day. Then De Graafstroom uses it to make that delectable, naturally matured cheese. Our farm is a real family business; in the olden days, all the children chipped in with the work. Now it’s my son Paul’s turn to take over the farm.”
