I’ve crossed my Holsteiner cows with Montbeliarde, a sustainable breed that produces milk with more protein in it, which is better for De Graafstroom’s creamy, delicious cheese.” My 55 cows are like top-ranking sportswomen: they have to perform well everyday and I love supervising them.”
